
Rainy day Butterfly buns

The story behind the recipe
My mother taught me this recipe - She has always made different types of queen cakes with different toppings. Butterfly buns are my favorite, my strongest memory is of making these on many a rainy wintery saturdays. I love making them now with my little boy, he loves to pull up his little step so he can reach the kitchen counter and help - he loves adding the decorations and then licking the cream straight off!

Ingredients
115g of butter (leave out of the fridge for about 30mins before use) 115g of caster sugar 170g of self raising flour 2 medium eggs (beaten in a small jug or bowel) 1 tsp vanilla extract 200ml double cream 120g strawberry jam 50g icing sugar
Method
Preheat the oven to 180°C. Beating the butter and sugar in a large bowl until pale and fluffy with an electric mixer. Slowly add in the eggs, alternating with a large spoon of sieved flour and beat in between each addition. Line a 12 cupcake tin with cupcake cases and fill each with a spoonful of mixture. Bake for 20 minutes and let cool fully. Cut the top off each bun with a knife and then in half. Wipe the cream with 1/2 the Icing sugar until it is in stiff peaks Add a layer of jam, topped with a good dollop of cream - cream can be piped on if you are feeling fancy! Place the two halved pieces of sponge on top to resemble a butterfly and add a small dollop of jam between the wings as the head. Enjoy!
