The story behind the recipe
My friend Mary, a `Galway girl’ with whom I have been friends since 1967 gave me this recipe. I have passed it on to a lot of other people.

Ingredients
4 cups (14 oz/397 g) rolled oats 2 teaspoons baking soda 1 teaspoon salt 1 large egg , at room temperature 2 ¼ cups (18 oz/507 g) plain whole milk yogurt 1 tablespoon molasses (treacle) Additional ingredients for a breakfast bread: 2ozs raisins A tablespoon of mixed peel A teaspoon of cinnamon or spice to taste.
Method
Preheat the oven to 350°F (180°C) and butter and line a 9x5-inch (23x12½cm) loaf pan with parchment paper. Set aside. Place the oats in a food processor and process for 20-30 seconds, until ground into flour. You can actually skip this part, just use the rolled oats as they are. Transfer the oats into a large mixing bowl and toss with the baking soda and salt. Add any fruit or spice at this point. In a separate medium bowl, whisk together the egg, yogurt and molasses until well combined, then stir into the oat mixture. Spread the batter evenly into your prepared loaf pan and bake for 45-50 minutes, until firm. Note: if you replace the yogurt with buttermilk then you will need to reduce the amount, read the dough, it will be a thick wet dough.
