The story behind the recipe

Most Sundays, I make these scones, the one recipe my dad ever learnt. Making them keeps him close and brings a little piece of those Sunday mornings back to the kitchen. Simple and delicious.

Buttermilk Scones

 

Ingredients

300g Gem plain flour 25g Gem caster sugar 2 tbsp Gem baking powder Pinch salt 85g butter 175ml buttermilk 1 egg for egg wash

Method

Sieve the flour, baking powder and salt into a bowl. Add the sugar. Rub in the butter with your fingertips until it looks like breadcrumbs. Make a well in the centre and add the buttermilk. Mix until a soft dough forms. Turn onto a lightly floured surface and knead for 10 seconds. Roll the dough to about 2 inches thick and cut out 8 scones using a 6cm cutter. Place on a baking tray and rest for 10–15 minutes. Preheat the oven to 200°C / 180°C fan. Brush the tops with beaten egg and bake for 12–15 minutes, until golden.
