
Brown Treacle Bread

The story behind the recipe
A good friend gave me this recipe, and it’s one I’ve made so many times since. It’s become a favourite in the lunchboxes - easy to make, lovely and hearty, and even better with a bit of butter and while it’s still warm.

Ingredients
350g wholemeal flour 50g plain flour 50g porridge oats 1 tsp salt 2 tsp bread soda 2 medium eggs 300ml buttermilk 2 tbsp treacle 1 tbsp vegetable oil 2 tbsp oats to sprinkle on top
Method
Preheat your oven to 180C/160C fan. Grease & dust a 2lb loaf tin or line with a baking liner. Into a bowl add both flours, salt, porridge and soda. Mix. In a separate bowl, mix the eggs, buttermilk, treacle and oil. Add the wet to the dry & mix. Spoon into the prepared tin and sprinkle with porridge oats. Bake in the oven for 60 minutes. At this stage, remove the loaf from the tin and return to the oven for a further 20 minutes. Remove and allow to cool before slicing.
